Ok, recipes are *hard*. I realize I don't measure stuff. Tonight's dinner is potato leek soup.
(this is basically the recipe found here, but adjusted for fewer servings)
Ingredients:
2 potatoes
1 leek
1 tbsp butter
broth (uh, maybe 1.5 cups?)
milk (uh... basta estimate!)
Slice the leeks into this strips, and the potatoes around 1/4 inch thick. In a pot, sautee the leeks with some butter. Then add the potatoes, and some broth (I used some chicken stock, but vegetable broth or water should be ok too.) Cook for 15 minutes or until the potatoes are cooked, then mash the potatoes in the pot. Add the milk, stir, and wait for it to heat back up. Season with salt and pepper to taste, and serve with some stale bread.
This makes about 3 bowls of the stuff. You can see here that I didn't bother to peel the potatoes (remember to wash them thoroughly).
